Strawberry Blueberry Bread Ingredients
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 cup granulated sugar
- 1 egg
- 1/2 cup oil or 3/4 C Full Fat Greek Yogurt ;(ALDIs organic)
- 3/4 cup full fat milk or buttermilk
- 2 teaspoons vanilla
- 2 cups chopped strawberries
- 1 cup whole Blueberries
- 2 tablespoons all purpose flour
Instructions
- Preheat oven to 350 degrees F.
- Spray a 9 x 5 loaf pan with cooking spray.
- In a large bowl, whisk together the flour, baking powder, and salt.
- In a separate medium bowl, whisk together the egg, sugar, oil, buttermilk, and vanilla.
- Sprinkle 2 T AP Flour on the berries and toss gently to coat them. This keeps the color from spreading and the berries from sinking to the bottom of the bread.
- Pour the wet ingredients into the dry ingredients and stir until just combined and moistened. Be careful not to over mix. It can be a little lumpy, that’s ok.
- Carefully fold in the flour coated chopped strawberries and blueberries and stir just until combined and berries are evenly distributed.
- Pour the batter into the prepared 9x5 loaf pan and bake for 50 minutes to an hour. Check it at 50 minutes by sticking a toothpick into the center of(if its clean, its done), it’s probably done at this point.
- Remove the Bread from the oven when done (tooth pick comes out clean) and cool on a wire rack.
GLAZE 1 cup sifted powdered sugar 1/4 cup heavy cream Juice and grated rind of one large lemon 2 T lavender buds Mix powdered sugar and cream until just starting to thicken, add lemon rind, juice and lavender. Drizzle over completely cooled bread.
